Professionally, Tony launched his career in St. Louis, Mo., as a young chef at the landmark Italian restaurant Charlie Gitto’s on The Hill, followed by a stint at the imaginative Trat-toria Marcella under the direction of the Komerek brothers. Learning from the renowned Charlie Gitto, Tony was quickly named Executive Chef, developing an early and deep understanding of running a kitchen and business before heading to Scottsdale.

Having last been with Chef Mina and Bourbon Steak at the Scottsdale Princess for the past three years, Tony continued the tradition of great dining while also exploring new and innovative culinary opportunities.

Utilizing his connections with and passion for local farmers and vendors, Tony looks forward to lending a solid sense of Arizona within the menu at Osteria while striving to share his experiences and expertise with the next generation of cooks.
